Smoked Pulled Ham 🤯. Easter is a few weeks out and ham is a popular item for dinner that day. I tried pulled ham last year with my Apricot Glaze that normally gets paired with my sliced ham and it was crazy good. Its a longer cook then your normal ham cooks but worth the process. Smoking a massive 7 Bone Tomahawk Rib Roast with a reverse sear. Had to pull out the @MEATER Block for this cook. I will use 3 out of the 4 probes for this cook. One probe on each side to reference but the one i put in the center will be the one i follow for my medium rare. 225° on @Traeger Grills Timberline XL. That will go for several hours. Once the center probe reaches 120° to 125°, i will transfer to a hot and ready Flatrock Griddle for the sear. Searing on all sides is key for crust and flavor. Smoked Corned Beef and Cabbage. These were massive packer corned beef briskets. Just needed to be trimmed and rinsed real quick to remove the brine. Hit with my Kendrick BBQ All Purpose Rub. Smoked at 225° overnight on my @Traeger Grills using the @MEATER probes to track the internal temps. I was looking for at least 170° internal before putting in the pan with all the veg and the braising liquid. Once they hit temp, the carrots, potatoes and cabbage went in. Using beef broth and Guinness for the braising liquid. Once wrapped, I bumped the temperature of the Traeger to 275° for another 3 hours.
