My Honey Salmon Sushi Bowls Serves 4 What you’ll need: 4 fillets salmon (skinless & boneless) 2 cups sushi rice 2 Tbsp olive oil 2 cucumbers (finely sliced into matchsticks) 1 large carrot (peeled & finely sliced into matchsticks) 125g canned corn kernels (rinsed & drained) 1 large ripe avocado (thinly sliced) Honey marinade: 2½ Tbsp honey 2½ Tbsp coconut aminos 2 tsp rice wine vinegar 1 Tbsp lime juice 2 tsp sesame oil 2 garlic cloves (minced) 1 tsp fresh ginger (minced) Sushi bowl dressing: 3 Tbsp rice wine vinegar 1½ Tbsp coconut aminos 1 Tbsp fresh lime juice 2 tsp sesame oil 2 tsp honey 1 tsp sesame seeds Combine all honey marinade ingredients in a small bowl and mix together well Place salmon fillets in a shallow dish and pour marinade over the top. Ideally cover and allow to marinate in the fridge for 4 hours, however you can skip this step (the flavour just won’t penetrate the fish) Cook sushi rice as per packet instructions Heat olive oil on medium-high heat in a cast iron skillet or barbecue. Place each fillet of salmon in the hot skillet, along with the remaining marinade. Cook on each side for a few minutes (dependant on size of fillet) until each side is lightly charred. The remaining marinade will go thick and sticky Combine sushi bowl dressing in a small bowl and mix well Construct sushi bowls with rice, veg, salmon and dressing. Sprinkle sesame seeds on top and serve
PAGE 76 of my healthy cookbook: Sunee Side Up Sunee Sausage Rolls Makes 12 rolls 📝 Ingredients • 2 sheets gluten free puff pastry • 1 tsp olive oil • 1 stalk celery (finely sliced) • 500g high-quality gluten free sausage mince • ½ cup brown onion (finely diced) • 1 carrot (peeled & grated) • ½ cup tightly-packed baby spinach (finely sliced) • 2 garlic cloves (minced) • 1 Tbsp tomato paste • 1 Tbsp gluten free Worcestershire sauce • 1 tsp dried mixed herbs • 2 eggs • 2 tsp seeded mustard (optional) • 1 tsp sesame seeds (optional) 👩🏼🍳METHOD: 1. Preheat oven to 180°C and line a baking tray with baking paper. 2. Thaw pastry sheets on a benchtop under a damp tea towel. 3. Sauté celery in oil until just soft. Set aside to cool. 4. In a large bowl, mix sausage mince, onion, carrot, spinach, garlic, tomato paste, Worcestershire, herbs, 1 egg, and cooled celery. 5. Roll out each thawed pastry sheet to thin slightly, then cut in half. 6. Spread mustard (if using) down the center of each half. Place ¼ of the mixture on each. 7. Beat second egg for egg wash. Brush one side of pastry, fold both sides over filling, pressing to seal. 8. Flip rolls, cut each into 3 pieces. Prick tops with a fork. 9. Brush tops with egg wash and sprinkle sesame seeds (optional). 10. Bake for 35 minutes. Serve warm and enjoy! #healthyrecipes #healthykidsrecipe #healthykidsdinner
