𝙑𝙀𝙉𝙄𝙎𝙊𝙉 𝘾𝙃𝙊𝙋𝙎 🥩 Believe it or not this was my 1st time cooking venison. It came out amazing and even with all the flavors that went into it you can still taste the meat which is very similar to beef in my opinion. Definitely would make this again in a heartbeat! _______________________________________ 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨: • Venison rack • @Tony Chachere Wild game marinade • @tonychacheres Bold Cajun seasoning 𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨: • Add protein to freezer bag then add in marinade. Seek and set in the fridge for 1hr • Fire up your grill for indirect cooking. Adding hickory wood chunks for smoke at 300F. • Remove protein from marinade, pat dry then season. • Place protein on cold side of the grill and close the lid. When protein reaches an internal temperature of around 125F place over coals to get a nice sear. Keep flipping until internal temperature reaches 135F. • When done remove and let rest for 20min before slicing. Using the @slotdog to score the dogs for more smoked penetration 2. Mustard as a binder then season 3. Smoke at 225F for 1 hr using @Jealous Devil Max briquets and Whiskey barrel wood blocks 4. After 1 hr remove then cut up into 1in pieces. Add them into a foil tray with butter, brown sugar and bbq sauce and mix. Then back onto smoker at 400F for 30min mixing every 10min 5. Beef cheeks are already rich, so I threw in some Cotija cheese for that creamy bite, then topped it off with a fire jalapeño chimichurri. No doubt, one of my favorite game-day snacks this year! 🔥 _______________________________________ 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨: •Beef cheeks • @fireandsmokesociety Super Special Prime Steak and Brisket Rub • Cotija cheese • Egg roll wrappers 𝙅𝙖𝙡𝙖𝙥𝙚𝙣𝙤 𝘾𝙝𝙞𝙢𝙞𝙘𝙝𝙪𝙧𝙧𝙞: • 1c chopped cilantro • 1c chopped parsley • 1 small shallot minced • 1 whole garlic minced • 2 jalapeños diced • 1 whole lime juices • 1 tbsp @fireandsmokesociety Super Special Prime Steak and Brisket Rub • 1/4c red wine vinegar • olive oil add to your preferred consistency 𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨: • Olive oil as a binder then season generously • Smoke at 225F w/ oak wood until an internal temp of 180F • Wrap in aluminum foil with beef broth then back onto smoker until an internal temp of 205F • Shred then add to egg roll wrappers w/ Cotija cheese. My guy @heatstrokesbbq is a Pizza Master, so you already know we had to throw down a pie. Everything about this one was money! That Tocino marinated pork belly brought the perfect balance of sweet and spicy, and you know I had to make it Silog with the fried egg on top and crispy garlic.
