Creamy Tortellini Sausage Soup 🎃 This was the first recipe of my fall soup series last year, and I’m back with an even better version! Here’s how to make it: 1 tbsp unsalted butter 1 tbsp olive oil (I use @Brightland rosemary)
1 lb Italian Sausage⁣, hot or mild
1 medium yellow onion⁣, finely diced
1/2 cup celery, finely diced 1/2 cup carrot, finely diced
6-8 cloves garlic, minced, to taste
1-2 tsp Italian Seasoning⁣, to taste
Salt and black pepper, to taste
1 tsp red chili flakes, to taste 3 tbsp tomato paste
3 tbsp flour⁣
1/2 cup dry white wine⁣
28 oz. crushed tomatoes⁣
4 cups low-sodium chicken broth⁣
Parmesan rind⁣, optional Bay leaf, optional
1/2 cup heavy cream⁣
2 cups spinach⁣

1. In a large pot, heat your olive oil and butter. Add in your onion, celery, carrot, pinch of salt, black pepper, Italian seasoning, and red pepper. Saute for about 5-7 minutes or until tender and beginning to caramelize.⁣ 

2. Add in your Italian sausage and cook until no longer pink. 3. Clear a center in your pot. Add in your tomato paste and let it cook off in the pan for about a minute before incorporating with the rest. Then cook for another 2 minutes. 4. Sprinkle in your flour and stir. Cook for 1-2 minutes to cook out the raw taste. 5. Deglaze with white wine, scraping up any brown bits on the bottom of the pan. Let that cook for about 2 minutes. 6. Pour in your crushed tomatoes and chicken broth. Season with salt and pepper. Stir. 7. Drop in your parmesan rind and bay leaf. Stir and simmer, uncovered, for 20-30 minutes. 

8. Once finished, remove your parmesan rind (if you can find it) and bay leaf. Pour in your tortellini and spinach. Simmer for another 3-4 minutes, until your tortellini is tender. 9. Pour in your cream and parmesan. Stir until creamy. Serve immediately and enjoy!

Tomato Egg Ingredients * 4 eggs * Salt to taste * Neutral oil * 2 scallions(sliced) * 3-4 tomatoes(cut into chunks) * 2 tbsp water * 1 tsp soy sauce * 2 tsp oyster sauce * 2 tsp sugar * 2 tbsp ketchup * 1/4 tsp white pepper * 1/4 tsp msg * 1 tsp sesame oil Instructions 1. Prep ingredients by slicing scallions and cutting tomatoes into chunks. 2. Whisk eggs and season with a pinch of salt. 3. Heat 3 tbsp of oil in a wok on medium high heat. Pour eggs and scramble and once the eggs are set but are still slightly runny, set it aside(30-45 seconds). 4. Add 2 tbsp oil to the same wok and sauté the white portion of scallions(30 seconds). 5. Once fragrant, add the tomatoes and a splash of water. 6. Let that simmer and once the tomatoes become soft and release their juices, add soy sauce, oyster sauce, sugar, ketchup, white pepper, and msg. 7. Let that simmer and once thickened, incorporate the scrambled eggs. 8. Chilli beef folded in a wrap with crispy tortilla chips, melted cheese, a chive sauce and then brushed with garlic butter for an absolute banging quick and easy dinner 🤤 Hit SAVE and let me know if you recreate it 📌💭 Ingredients (serves 2): 2 flour tortilla wraps  50g grated mozzarella  2 ladles of leftover chilli (I pasted my chilli recipe 19th June!) 20g tortilla chips - I used chilli heatwave  5g light butter  Tsp chopped garlic  A sprig of parsley chopped  Chive sauce (could sub with sour cream and chive shop brought)  60g fat free greek yoghurt ¼ tsp garlic granules  ¼ tsp onion granules  Tsp dried chive  Tsp distilled vinegar  💗Start by making up the chive sauce and set to one side.  💗Next, slice the wrap half way down the center. In one quadrant, add the cheese, then the chilli beef, the tortilla chips, followed by the chive sauce.  💗Fold carefully before transferring to a pan. Keep on one side for a minute and half before flipping for a further minute and half.  💗Whilst the wrap cooks, in a bowl melt the butter and chopped garlic in a microwave. Here’s how to make it: 3 lb mini Yukon gold potatoes, cut into 1” pieces 1 lb bacon, cut into small pieces (reserve a few tbsp for topping) 2 tbsp butter 2 tbsp reserved bacon grease 1 medium yellow onion, diced 8-10 cloves garlic, minced, to taste 1/4 cup flour 2 cups milk 1 cup heavy cream 4 cups chicken broth Salt and black pepper, to taste 1 tsp chicken bouillon (optional) Pinch of cayenne pepper (optional) 2 cups freshly shredded cheddar cheese, plus more for topping Toppings: Cheddar cheese, sour cream, bacon, and green onions Instructions 1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside. Carefully soak up the excess bacon grease with a paper towel (or save for later) leaving about 2 tbsp behind in the pot. 2. Add the butter and diced onion to the pot, sautéing for about 5 minutes or until the onion softens. Stir in the minced garlic and cook for about 30 seconds, or until fragrant. 3. Add the flour and stir. Cook for about 1-2 minutes. 4. Slowly whisk in the heavy cream and milk in batches (about 1/3 at a time), followed by the chicken broth. 5. Season with salt, pepper, chicken bouillon, and cayenne. Stir well to combine. 6. Add the potatoes to the pot and bring the mixture to a boil. Cook until the potatoes are fork-tender, about 15 minutes. 7. Reduce the heat to medium-low. Stir in the shredded cheddar cheese and cooked bacon (reserving a few tablespoons of each for topping) until the cheese has melted. 8. Mash the potatoes using a potato masher, whisk, or wooden spoon until you reach your desired consistency. 9. Serve immediately and top with additional cheddar cheese, sour cream, bacon, and green onions. One Pan Greek Chicken & Potatoes 🔥 This one pan Greek Chicken and Potato tray bake with creamy Tzatziki is so simple but tasty. Start by slicing new potatoes and get them into a baking dish with some skin on chicken thighs. Add a good amount of olive oil, salt, pepper, oregano, thyme, mixed herbs, garlic granules, shawarma seasoning (optional) and zatar. Add the zest and juice of one lemon and mix until everything is combined. Get this into the oven at 200C for about 35-40 minutes until the chicken is cooked and the potatoes are crispy. For the Tzatziki, grate half a cucumber into a bowl and squeeze out the liquid using a tea towel. Put the grated cucumber in a bowl with a couple of spoonfuls of greek yoghurt, a grated garlic clove, salt, pepper, lemon zest, lemon juice and finely chopped dill - Mix this well and season to taste. Lasagna Soup ❤️‍🔥 She’s finally here and she’s just as delicious as I remember. Here’s how to make it: 1 yellow onion, diced 6-8 cloves minced garlic, to taste 1/2 lb italian sausage 1/2 lb lean ground beef (note: can use a full lb of preferred protein) 2-3 T tomato paste Salt and pepper to taste 1-2 t @Tony Chachere Seasoning, to taste (optional) 1 t dried basil 1 t dried parsley 1 t dried oregano 1 t Italian seasoning 1 t red pepper, to taste 24 oz @CarboneFineFood marinara 1/2 cup heavy cream 6 cups beef broth 1/2 lb lasagna noodles, broken Handful of freshly torn basil 1 cup parm 1 cup ricotta 1 cup mozzarella 1/4 cup fresh parsley Salt and pepper to taste 1. In a pot, heat olive oil over medium heat. Add in your onion, salt, pepper, dried basil, dried parsley, dried oregano, italian seasoning, and red pepper. Saute until softened, about 5 minutes. 2. Throw in your garlic and cook until fragrant, about 30 seconds. 3. Add in your sausage and beef, breaking into pieces with a wooden spoon. Season with salt, pepper, and Tony’s (if using). Cook until no longer pink. ( you might need to drain the grease) 4. Clear a center in the pot and add the tomato paste. Let sit undisturbed for a minute or two before incorporating with the rest. Then cook for another 2 minutes. 5. Pour in your beef broth and marinara. Bring to a gentle boil. 6. Pour in your lasagna pieces, reduce heat, and simmer for about 10 minutes, or until al dente, stirring occasionally. 7. While your noodles are cooking, in a medium mixing bowl, combine the ricotta, parmesan, mozzarella, parsley, salt, and pepper. Stir until incorporated. 6. Once your noodles are done, turn the heat off, add in your heavy cream and fresh basil. Add in a few dollops of the ricotta mixture, saving some for topping. Stir to combvine and taste for seasonings. 7. Serve with a dollop of the ricotta mixture and fresh basil or parsley. Save the reel and try this for yourself. ✌🏾 Recipe, 3 tablespoons Butter 1 large Carrot - diced 1 large Onion - diced 2-3 stalks Celery - diced 6 cloves Garlic - chopped 4 Chicken breasts - skinless 2 tablespoons Dry Jerk spice or Cajun 3 litres Chicken stock or broth 2 sprigs Thyme 2 Bay leaf 1 tablespoon chopped Parsley Scotch bonnet Salt and pepper to taste 2 tablespoons Parsley - chopped 2 tablespoons Parmesan - grated Method, Season your chicken breast on both sides. In a large stainless steel pan sear off your chicken 2 minutes per side and add them to a large pot. Fill pot with chicken stock and place on medium heat. Once liquid begins to boil turn heat off and allow to cool. Put a large thick bottomed pot on medium heat and add your butter. Next sweat off all your vegetables in the butter for 3-4 minutes. Then add your garlic and continue to sweat for another 2-3 minutes. Add thyme, bay leaves, and scotch bonnet pepper. Remove chicken breasts from stock and set aside. Pour in your stock to the vegetables and bring this to a simmer. In a separate pot cook your pasta noodles. Once chicken has cooled slightly but still warm shred by hand into a large bowl. Add chicken and pasta into your pot and stir to incorporate. Taste for seasoning and adjust accordingly. Finish with parsley and Parmesan cheese. #chickennoodlesoup #soupseason #EasyRecipes

Here’s how to make it: * 2 tbsp olive oil * 1 medium onion, diced * 2 medium carrots, diced * 2 celery stalks, diced * 8 cloves garlic, minced, to taste * 1 tsp dried oregano * 1 tsp dried thyme * 1 tsp red pepper flakes (optional) * Salt and pepper, to taste * 1 lb ground beef, optional * 2-3 tbsp tomato paste * 6 cups beef broth (can use chicken or vegetable broth if preferred) * 24 oz Rao’s marinara sauce * 2 (15 oz) can cannellini beans, drained and rinsed * 1 bay leaf * 1 parmesan rind (optional) * 1 cup ditalini pasta * 1 bunch or about 2 cups kale, chopped, stems removed * Juice from 1/2 lemon (to taste, plus more for garnish) * Grated Parmesan, for garnish * Fresh chives, chopped, for garnish (or preferred herb) * Freshly cracked black pepper, for garnish * Extra virgin olive oil, for drizzling * Lemon wedges, for serving 1. In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery. Season with salt, pepper, oregano, thyme, and red pepper flakes. Sauté for 6-8 minutes until softened. 2. Add in your garlic and cook for another 30 seconds. 3. Clear a center in your pot and add the ground beef. Season with more salt and pepper, and cook until browned, breaking it up as it cooks, about 5-7 minutes. 4. Stir in the tomato paste and cook for another 1-2 minutes to caramelize it slightly. 5. Add the broth, marinara, beans, bay leaf, and parmesan rind. Stir everything together, bring to a boil, and then lower to a simmer. Let it simmer for about 30 minutes, uncovered, stirring occasionally to develop the flavors. 6. After 30 minutes, add the ditalini pasta and cook for 8-10 minutes, until al dente. 7. In the last 5 minutes of cooking the pasta, stir in the chopped kale. Allow it to wilt and soften into the soup. 8. Stir in fresh lemon juice to taste, adjusting seasoning with more salt and pepper if needed. 9.
