BLUEBERRY CINNAMON CRUNCH SOURDOUGH CATHEAD BISCUITS Honestly just want to be buried in a pan of these 🤌 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (makes 7-8): Blueberry Sourdough Cathead Biscuits: - 2 cups (256g) cake flour (see homemade version on website) @King Arthur Baking - 1 cup (130g) all-purpose flour @Bob’s Red Mill - 2 tbsp (30g) granulated sugar - 1 tbsp (12g) baking powder - 1/2 tsp (3g) baking soda - 1/2 tsp (3g) salt - 12 tbsp (171g) salted butter, cold and cubed - 1 cup + 1 tbsp (255ml) buttermilk (or 1 tbsp apple cider vinegar or lemon juice mixed with 1 cup + 1 tbsp milk of choice) - 1/2 cup (140g) sourdough discard [substitution: 1/2 cup (120g) greek yogurt] - 1 cup (130g) fresh or frozen blueberries (I used wild blueberries) @Wyman’s Cinnamon Crunch Topping: - 3 tbsp (45ml) buttermilk or heavy cream, for brushing - 1/2 cup (120g) brown sugar - 2 tsp (3g) cinnamon Whipped Salted Vanilla Bean Butter: - 1/2 cup (113g) salted butter, at room temperature - 1 1/2 tsp vanilla bean paste @Amoretti- - Honey or raw honeycomb, for serving - Flaky sea salt, for serving Instructions: Preheat the oven to 425F. Lightly grease a 12” cast iron skillet or large round baking pan with butter. Set aside. Start by preparing the biscuit dough. In a large bowl, whisk together the cake flour, all-purpose flour, sugar, baking powder, baking soda, and salt. Add in the cubed butter, and use a pastry cutter or two knives to cut the butter into the flour mixture, until it is crumbly and the butter resembles pea-sized chunks. Make a well in the center of the mixture, and pour in the buttermilk and sourdough discard. Mix with a wooden spoon until barely combined (it will still be crumbly). Then, use your hands to knead and fold the dough over itself a couple of times until combined. Add the blueberries, and gently fold a few more times until the blueberries are evenly dispersed. The dough will be a little sticky, but should be soft enough to scoop! Use a very large cookie scoop or a ½ cup measuring cup to scoop the dough for each biscuit, and place in the prepared skillet or pan. Mix together the brown sugar and cinnamon in a small bowl for the cinnamon sugar topping. Brush the tops of the biscuits with buttermilk or heavy cream. Then, sprinkle the tops with the cinnamon sugar mixture. Bake for 20-25 minutes, or until fluffy and golden brown. While baking, prepare the whipped salted vanilla bean butter. In a medium bowl, whip the butter and vanilla bean paste together with a whisk or handheld electric mixer until combined and fluffy. It will also turn slightly lighter in color. Remove the biscuits from the oven and serve warm with the whipped salted vanilla bean butter, honey, and flaky sea salt if desired.
